In a proposed mechanism of action of probiotics, Bonifait, Chandad, Grenier (8) stated that probiotics had the potential to secrete several antimicrobial substances like hydrogen peroxides, bacteriocins and organic acids. Moreover, Gueimonde and Salminen (34) added that probiotics were important in modifying the surrounding pH, modulating oxidation-reduction potential and pH for the inhibition of the establishment of pathogens. Probiotics were also shown to be involved in the induction of immunity through the stimulatory effects on the nonspecific immunity and the resultant modulation of cellular and humoral responses (8).
